- molasses has a lot more sugar and is thicker
- You can use 10 oz. of cane juice, 2tbsp lemon or lime juice and 1/10 cayenne in place of the maple syrup in your diet. OR Certainly, You can use unsulphured black strap molasses
- Maple syrup is made from the sap of a Sugar Maple tree. Molasses are made from the juice of several varieties of sugar cane. Sometimes the syrup made from sorghum, a variety of wheat, is referred to as sorghum molasses. They each have their own unique flavor. Since they all are mostly sucrose you can substitute one for the other, in most recipes, if you will accept the change in flavor of the end product.
- You can get Grade B syrup directly from the sugarmakers... http://vtmaple.org/maple-by-mail.html They have all the different grades. Here's some information on the maple syrup grading system... http://vtmaple.org/grades.html If you ask you may also be able to get Grade C which is very dark and very strong in flavor.
